My love for TNG notwhitstanding, I gotta say, design wise, the Excelsior class (a.k.a. Enterprise-B) is by far the most beautiful and my favorite one ever.

Runner up the Olympic class - a.k.a. USS Pasteur, Captain Crusher's ship in the future depicted in TNG's series finale "All good things..."

Yes, I know this may seem like an odd choice, I just love how different it is from most other designs.
